Dark Chocolate Avocado Mousse
Ingredients:
- 1 medium avocado
- ½ C dark semi-sweet chocolate chips
- ¼ C sugar
- ¼ C cocoa powder, unsweetened
- 1 tsp cinnamon
- 1 tsp vanilla extract
- 1/3 C raspberries
Directions:
- Halve the avocado and scoop the flesh into a food processor or blender
- Place the chocolate chips in a microwaveable bowl, melt for 45 seconds to 1 minute
- Add the sugar, cocoa powder, cinnamon, and vanilla extract to the chocolate and mix until smooth
- Add the chocolate mixture to the avocado flesh and blend until smooth
- Scoop the avocado chocolate mousse into glasses or ramekins
- Refrigerate for at least 30 minutes before serving
- Add 1-2 raspberries as topping (optional)
