Ingredients: 
  • 1 C all-purpose flour
  • 1 C wheat bran
  • 1 teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • 1 C mashed banana
  • ¼ C canola oil
  • ½ C light brown sugar
  • 1 large egg
  • ½ C chopped walnuts, optional
Directions: 
  • Preheat oven to 375 degrees
  • In a bowl, mix together flour, wheat bran, baking soda, and cinnamon; set aside
  • In a mixing bowl, beat together banana and oil. Add the brown sugar and egg – mix well.
  • Add the dry ingredients (flour mixture), stirring just until blended
  • Stir in walnuts – optional
  • Spoon into paper lined muffin tins and bake for 15 minutes
