Ingredients:
- 1 C all-purpose flour
- 1 C wheat bran
- 1 teaspoon baking soda
- ½ teaspoon ground cinnamon
- 1 C mashed banana
- ¼ C canola oil
- ½ C light brown sugar
- 1 large egg
- ½ C chopped walnuts, optional
Directions:
- Preheat oven to 375 degrees
- In a bowl, mix together flour, wheat bran, baking soda, and cinnamon; set aside
- In a mixing bowl, beat together banana and oil. Add the brown sugar and egg – mix well.
- Add the dry ingredients (flour mixture), stirring just until blended
- Stir in walnuts – optional
- Spoon into paper lined muffin tins and bake for 15 minutes
