Ingredients:
- 1 onion, chopped
- 1 green bell pepper, cored and chopped
- 3 ounces of bacon, cut in ½-inch pieces – optional
- 2 (15-ounce) cans red kidney beans, drained
- 2 (19-ounce) cans white kidney beans (cannellini), drained
- 2 tablespoons Worcestershire sauce
- 1/3 C light brown sugar
- 2/3 C barbecue sauce
- 1 teaspoon dry mustard
Directions:
- Preheat oven to 350 degrees
- In a large skillet coated with nonstick cooking spray (can use butter or oil for additional calories), sauté the onion and green pepper until tender, about 4 minutes
- Add the bacon. Cook for 5 minutes longer
- Place all the beans in a 2-quart casserole dish and add the sautéed vegetables, Worcestershire sauce, brown sugar, barbecue sauce, and mustard. Mix well
- Bake, covered, for 40 minutes
